Slow Cooker Guinness Beef Stew

Cook Time: 8 hr
Total Time: 8 hr, 15
Yield: 6-8 servings

Ingredients:
10 small red potatoes, quartered
1 (14.5 ounce) can sliced carrots
2 full stalks celery, chopped
3 lbs stew meat, cubed
1/2 cup flour
salt and pepper to taste
1 teaspoon garlic powder
2 tablespoons olive oil
1 1/2 cups diced onion
2 (8 ounce) cans tomato sauce
10 ounces beef broth (about 1/3 of a large box)
1 (13 g) envelope Onion Soup Mix
1 teaspoon dried basil
12 ounces (1 bottle) Guinness Stout

Instructions:
Put potato, carrot, and celery chunks in the bottom of crock pot on low heat. Pour in beer, beef broth, garlic powder, salt and pepper, soup mix, and basil. Stir to combine.
Season beef lightly with salt and pepper and then coat in the flour.
Heat oil over medium high heat in a large skillet. Cook the beef until almost browned, and then add in the onion. Continue turning and browning until the meat is fully browned and the onions are soft and translucent, about 5 minutes.
Add meat and onions to the slow cooker.
Stir in the tomato sauce and cover, heating on low for 8 hours or high for 4 hours. Low is best, but if you don't have the time, high will work!

Serve with lots of bread and more Guinness! Enjoy!

Pistachio Pudding Cake

Pistachio Pudding Cake

Ingredients:
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant pistachio pudding mix
4 eggs
1 1/2 cups water
1/4 cup vegetable oil
1/2 teaspoon almond extract
7 drops green food coloring

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. 
In a large bowl mix together cake mix and pudding mix. Make a well in the center and pour in eggs, water, oil, almond extract and green food coloring. Blend ingredients, then beat for 2 minutes at medium speed. 
Pour into prepared 10 inch tube pan. Bake in the preheated oven for 50 to 55 minutes, or until cake springs back when lightly pressed. Cool in pan 15 minutes. Turn out onto a wire rack and cool completely. 


When cooled dust with powdered sugar or drizzle with glaze. 


Baked Reuben Sliders

Baked Reuben Sliders

Serves: 12

Ingredients:
1 pkg. Hawaiian Sweet rolls, sliced open
1/2 cup Thousand Island dressing
1/4 to 1/2 lb of corned beef, sliced thin
1 lb sauerkraut, drained
1/4 lb Swiss cheese, sliced
2 tbsp butter, melted

Instructions:
Preheat oven to 350 degrees F.
Butter the bottom of a 13x9 baking dish.
Place the bottoms of the rolls in the dish.
Spread 1/4 cup of Thousand Island dressing on the roll bottom halves.
Lay out the corned beef slices over all the rolls.
Spread the sauerkraut over the corned beef.
Lay the Swiss cheese slices over the top of the sauerkraut.
Spread the remaining Thousand Island dressing over the inside of the top halves of the rolls and place on top of the Swiss cheese.
Use a pastry brush to spread the butter over the tops of the rolls.
place in the oven to bake for 15-20 minutes or until the cheese is completely melted.
Remove from the oven and cut each roll out, place on a plate and serve!
