Maple Vanilla Granola

Granola is a very versatile food.  It's great as a breakfast or an on-the-go snack.  You can add it to yogurt and fruit to create a pretty parfait or as an ice-cream sundae topping!  Of course it's delicious on its own.  We've found some great granola recipes for you to try out.  Enjoy!



Maple Vanilla Granola

Ingredients:
1 1/2 cups rolled oats
1/2 cup chopped almonds
1/2 cup chopped walnuts
1/4 cup unsweetened coconut flakes
1/2 tsp cinnamon
1/8 tsp salt
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1 tbs vanilla extract

Instructions:
Combine all dry ingredients in a large bowl.
In a separate bowl, mix the syrup, coconut oil, and vanilla.
Pour over dry ingredients and stir until well incorporated.
Spread out evenly onto a baking sheet that has been covered with parchment paper.
Bake at 300 degrees for 30-35 minutes, or until golden, stirring at the half way point.
Let cool for 10 minutes WITHOUT touching the mixture. Then break up into smaller bits and store in an airtight container for a week or two.



Nutella Granola

Nutella Granola
Total Time: 40 minutes
Yield: 10 servings

Ingredients:
2 1/2 cups rolled oats
2 tablespoons coconut oil  Coupons
1/4 cup Nutella
2 tablespoons honey
pinch salt
1/2 cup hazelnuts, roughly chopped
1/2 cup milk chocolate chips

Instructions:
Preheat oven to 325F. Line a baking sheet with parchment paper or spray with oil.
Put oats in a large mixing bowl.
In a saucepan over low heat, melt coconut oil, Nutella, and honey together, stirring until smooth. Stir in salt. Pour this mixture over the oats and stir to coat the oats. Transfer to the prepared pan.
Bake in preheated oven for 15 minutes. Stir in chopped hazelnuts. Return to oven and bake for another 15 minutes.
Cool completely. Stir in chocolate chips.

Store in airtight container.



Blueberry Almond Granola

Blueberry Almond Granola

Cook Time: 45 min
Total Time: 55 min
Yields: 12 servings

Ingredients:
3 cups old fashioned oats
1/2 cup slivered almonds
1/2 cup whole almonds, chopped
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
2 tablespoons brown sugar
1 1/2 tablespoons coconut oil
1/4 cup honey
2 1/2 teaspoons almond extract, divided
1 teaspoon vanilla extract
1/2 cup dried blueberries

Instructions:
Preheat oven to 300 degrees and line a baking sheet with parchment paper or a silpat mat.
In a large bowl combine the oats, almonds, salt, cinnamon, and brown sugar, stirring until everything is combined.
In a small bowl whisk together the coconut oil, honey, 2 teaspoons of almond extract, and vanilla extract.
Pour the wet mixture in with the dry and stir everything together with a rubber spatula until it is coated.
Pour the granola out onto the prepared baking sheet and spread it out into a single layer.
Place the baking sheet in the oven and bake for 15 minutes.
Remove the granola from the oven and toss it around with a spatula so that it browns evenly.
Place it back in the oven and repeat the process 15 minutes later.
Bake the granola for a total of 40-50 minutes or until it is golden brown.
While the granola is baking place the dried blueberries in a small bowl with the remaining 1/2 teaspoon of almond extract and toss them together.
When the granola is done baking remove it from the oven and stir in the dried blueberries.

Let the granola cool completely before storing it in an airtight container.
