Hot Breakfast Egg and Cheese Sliders

Winter is definitely here and we are feeling the brutal chill! There is nothing like a hot breakfast on a cold morning to warm you from the inside out and start your day right.  We have found some delicious and toasty recipes for you to try out.  Enjoy!




Hot Breakfast Egg and Cheese Sliders

Ingredients:
Dinner Rolls, cut in half
Eggs, milk, salt and pepper (use 3 eggs for 2 sandwiches)
1 T. butter
sliced cheese, one slice per sandwich
2 slices deli ham for each sandwich
1/4 c. butter, melted
3/4 tsp. poppy seeds
3/4 T. spicy mustard
1/2 tsp. onion powder, or to taste
1/2 tsp. Worcestershire sauce

Instructions:
This recipe is great for making a few sandwiches or for making several. Adjust amounts according to how many sliders you would like to make.

Whisk eggs, milk, salt and pepper together. In a skillet, over medium heat, melt 1 T. butter and scramble eggs. I like to leave mine in thin "slabs" instead of crumbles. It helps hold them in the slider without falling out.
Cut rolls in half. Place bottom halves in greased baking sheet.
Set some eggs on the bottom half of the roll.
Layer ham on top of the eggs.
Layer cheese on top of the ham.
Put top half of roll on top of the cheese.
Melt 1/4 cup butter. Add poppy seeds, mustard, onion powder and Worcestershire sauce. Brush over tops of rolls.
At this point you can cover and refrigerate the sliders or bake them right now.
Bake at 350 degrees for 10-15 minutes.



Slow Cooker Apple Cinnamon Oatmeal

Slow Cooker Apple Cinnamon Oatmeal

Ingredients
2 gala apples peeled and diced
1/4 cup brown sugar
1 tsp cinnamon
1 tsp pure vanilla
2 cups rolled oats
5 cups unsweetened vanilla almond milk

Instructions:
Place diced apples in the bottom of your greased (I sprayed with coconut oil) 3-4 quart slow cooker.
Sprinkle cinnamon, brown sugar, and vanilla on apples.
Add rolled oats to slow cooker.
Add unsweetened vanilla almond milk.
Set on low for 7-8 hours, or on high for 3-4 hours
Stir and enjoy!

Notes:
Use 3 quart slow cooker.


Healthy Breakfast Egg Muffins

Healthy Breakfast Egg Muffins
 Prep: 10 min
Cook: 25 min
Yield: 12 muffings  

Ingredients: 
12 large eggs
1/4 cup nonfat milk
1 cup chopped fresh spinach
3/4 cup quartered cherry tomatoes
1/2 cup diced onions
Sliced avocado, for serving
Salsa, for serving
Crumbled cotija or feta cheese, for serving

Instructions:
Preheat the oven to 350°F. Grease a muffin pan with cooking spray.

In a large bowl, whisk together the eggs, nonfat milk and 1/2 teaspoon pepper. Stir in the spinach, tomatoes and onions.

Divide the mixture evenly between the 12 muffin pan cups and bake the muffins for 20 to 25 minutes, or until the egg is fully cooked. Remove the muffins from the oven and let them cool for 5 minutes in the pan then use a knife to loosen the muffins from the cups.


Top each muffin with sliced avocado, a dollop of salsa and a sprinkling of cheese then serve.
