Peanut Butter Banana Overnight Oats

Overnight Oats are a delicious and nutritious breakfast dish.  They are served cold so they are perfect to have on hot summer days.  (You can always warm them up if you prefer) The ingredients generally include old fashioned oats, milk or yogurt and fruit.  Overnight Oats are usually made in mason jars, but any airtight container will do.  We've found some great recipes for you to try out. Peanut Butter Banana Overnight Oats Recipe

Ingredients:
3/4 cup rolled oats old fashioned
3/4 cup milk any kind you like with your cereal
1/2 banana sliced
2 teaspoons packed brown sugar
1 Tablespoon creamy or crunchy peanut butter
2 teaspoons flax seeds optional

Instructions:
Layer all ingredients in a mason jar, starting with the oats.
Add milk last.
Place lid on jar and shake well to combine the ingredients.
Place jar in fridge for overnight.
Enjoy in the morning!



Raspberry Almond Overnight Oats

Raspberry Almond Overnight Oats

Ingredients:
1/2 cup rolled oats
1/2 coconut milk, plus a little extra
1/2 cup frozen raspberries
1 teaspoon chia seeds
3 teaspoons pure maple syrup
1 tablespoon sliced almonds

Instructions:
Place rolled oats, coconut milk, raspberries, chia seeds, and 2 teaspoons maple syrup in a pint size mason jar container. Stir until everything is mixed together and oats are covered in liquid.
Place top on and store in the refrigerator overnight, 5-8 hours.
In the morning, stir in extra coconut milk to loosen up the oats up and to get the consistency you like.

Stir in almonds and serve.


Peaches and Cream Overnight Oats

Peaches and Cream Overnight Oats

Ingredients:
1 1/2 cups diced peaches
2 tablespoons maple syrup, divided
1 cup old-fashioned oats, divided
1 1/2 cups low-fat plain kefir, divided
Ground cinnamon, to taste
2 tablespoons chopped pecans, divided (optional)

Instructions:
Preheat oven to roast at 400 degrees F. Line a baking sheet with parchment paper. Toss peaches with 1 tablespoon maple syrup and spread in one layer on baking sheet. Roast for 8 to 10 minutes until peaches are caramelized and soft, but not mushy.
In each of two mason jars, layer 1/2 cup oats, 3/4 cup kefir, 1/2 tablespoon maple syrup, half of the roasted peaches, and a sprinkling of cinnamon. Cover and refrigerate overnight.
In the morning, top overnight oats with chopped pecans if desired. Enjoy!
