Strawberry Shortcake Bars

I scream, you scream, we all scream for ice-scream!  Or some kind of delicious cold dessert anyway, right?  Summertime and cool desserts just go hand in hand.  We've found some cool and tasty treats for you to try out.  Enjoy!



Strawberry Shortcake Bars

Ingredients:
Butter Vanilla Cake:
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1 tsp baking powder
1/4 tsp salt
1 1/2 cup all-purpose flour
3/4 cup milk
1 tsp pure vanilla extract
1 pint strawberries
Frosting:
8 oz cream cheese, softened
1/4 - 1/2 cup powdered sugar
8 oz frozen Cool Whip

Instructions:
In a large bowl, beat together sugar and butter until creamy. Mix in eggs, baking powder and salt. Alternate between adding in the flour and milk, beating after each addition. Beat until all ingredients are combined. Stir in vanilla extract.

Pour batter evenly into a greased and floured a 9 x 13 inch baking dish.
Bake at 350 for 18-20 minutes until a toothpick comes out clean. Be sure not to over bake. Cake should be flat and light in color. Let cool completely. Set aside.
Dice up strawberries and set aside.

In a large bowl, cream together cream cheese, powdered sugar and frozen whipped topping. Evenly spread cream cheese mixture over top of cooled cake. Top with diced strawberries.
Refrigerate for 3 hours.


Chocolate Lasagna

Ingredients:
1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
6 Tablespoon butter, melted
8 ounce package cream cheese, softened
1/4 cup granulated sugar
2 Tablespoons cold milk
12 ounce tub Cool Whip, divided
2 of the 3.9 ounce packages Chocolate Instant Pudding
3 1/4 cups cold milk
1 1/2 cups mini chocolate chips

Directions:
Begin by crushing 36 Oreo cookies. I used my food processor for this, but you could also place them in a large ziplock bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are done.

Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.

Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust.
In a bowl, combine chocolate instant pudding with 3 and 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.

Spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.



Easy Banana Cream Pie

Easy Banana Cream Pie
Ingredients:
Ready Made Pie Crust or Easy Homemade Pie Crust
1 box Banana Cream Pudding (3.4 oz)
1 3/4 cup Milk
8 oz Cool Whip
3 Bananas

Directions:
Preheat oven to 400.
Par bake crust for 10-15 minutes until golden brown.
Allow to cool.
Slice 2 bananas and layer in bottom of crust.
Combine milk and pudding mix and whisk until thickened (about 2 minutes).
Fold in 2/3 of whipped topping.
Transfer to pie crust and chill for at least one hour.
Slice last banana.
Top with remain whipped topping and garnish with banana slices.
