Ham, Apple, and Brie Quesadillas
Makes 6 main course (along with a salad) servings. More for appetizers.
Ingredients: 2 tsp. Dijon mustard
2 tsp. apricot preserves
6 flour tortillas
1 large apple, cored and cut into 1/4 inch slices
6 slices good quality ham
6 oz. wedge of brie
a handful of fresh spinach (optional)
non-stick cooking spray
Instructions: Preheat oven to 400 degrees.
Mix Dijon and preserves in a small bowl. Set aside. Save any leftovers for dipping sauce if desired.
Cut the rind from the brie. Slice wedge into 1/4 inch slices. Stick the wrapped wedge into the freezer for 20 minutes or so first to make slicing easier.
Cover your largest cookie sheet with aluminum foil to make clean up a breeze. Spray foil with non-stick cooking spray. Lay tortillas on cookie sheet, making sure at least half of each is on sheet. Add about half a teaspoon of Dijon/apricot sauce to each tortilla—spread over half. Layer a slice of ham on top. Cover ham with layers of spinach, apples, then brie. Fold other half on top. Bake for about 4 minutes or until bottom side browned to your liking. Using a large spatula, flip each quesadilla. Bake for another 3-4 minutes.
Cool slightly and cut into wedges - using a pizza cutter works well.

Egg Vegetable Casserole
Yield: Serves 16

Cook Time: 35-40 minutes
Total Time: 50 minutes
Ingredients:
18 eggs
Splash of skim milk
Salt and pepper to taste
Spike seasoning
Olive oil
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 red onion, diced
1 cup of fresh spinach, chopped
3 Roma tomatoes, diced
1 cup mozzarella cheese, shredded
Parmesan cheese, shredded
Instructions:
In a large bowl, whisk together the 18 eggs. Add a splash of milk. Add salt and pepper to taste. We also used Spike seasoning, 1-2 teaspoons. If you don't have this, try Italian seasoning instead.
In a large skillet, saute the peppers and onion in a little bit of olive oil. Add in the spinach for a minute or two.
Pour the eggs in a greased 9 by 13 Pyrex dish. Add in the sauteed veggies and tomatoes. Stir everything in the pan. Stir in mozzarella cheese. Make sure everything is distributed evenly.
Bake in a 350 degree oven for about 35-40 minutes or until the eggs are set and golden. Sprinkle the casserole with Parmesan cheese, if you wish.

Sweet Berry Parfait
Serves 4
Completion Time: 45 minutes
Ingredients:
3 to 4 cups assorted berries (blueberries, blackberries, raspberries and/or strawberries).
2 tbsp granulated white sugar, or to taste
Cream:
3/4 cup Philadelphia Whipped Cream Cheese
1/2 cup heavy whipping cream
3 tbsp confectioner's sugar, or to taste
1/2 tsp pure vanilla extract
Choose your berries. For example, raspberries, strawberries and blackberries. If the strawberries are too large, slice them into pieces.
Combine berries in a large bowl and sprinkle with sugar. Toss with your hands to combine, and leave for 30 minutes.
After preparing the berries, combine the cream cheese, whipping cream, confectioner's sugar and vanilla extract. Whip with an electric mixer or by hand with a wire whisk.
Whisk the cream just until soft peaks begin to form.
Take 4 wine or parfait glasses and layer the berries with the cream.
