Blueberry Cinnamon Overnight Oats

Have you ever tried overnight oats?  They are a delicious and nutritious breakfast or snack food ~ especially on hot summer days.  Basically it's old fashioned oats, milk and fruit.  Some recipes include some type of sweetener and yogurt.  Most often you see them made in mason jars, but any airtight container will do.  We've found some great recipes for you to try out.  They are very versatile so you may want to adjust the recipes and create your own. The possibilities are endless!   Enjoy!



Blueberry-Cinnamon Overnight Oats

Total: 8 hours 5 minutes
Servings: 1

Ingredients:
2/3 cup Yoplait® Greek 100 plain yogurt (from 32-oz container)
1/4 cup milk 
tablespoons uncooked gluten-free old-fashioned oats
tablespoons Cheerios™ 
1/4 cup plus 1 tablespoon fresh blueberries 
Pinch ground cinnamon

Steps:
In container with tight-fitting cover, mix yogurt, milk and uncooked oats. Coarsely crush 2 tablespoons of the cereal, and stir into mixture. Stir in 1/4 cup of the blueberries.

Cover; refrigerate at least 8 hours but no longer than 3 days before eating. Top with remaining 1 tablespoon cereal, 1 tablespoon blueberries and pinch of ground cinnamon just before serving.


Vanilla Almond Overnight Oats

Vanilla Almond Overnight Oats

Ingredients:
4 half-pint canning jars and lids
2 cups quick cooking oats (gluten free), divided
2 cups unsweetened vanilla almond milk, divided
pinch of kosher salt
4 tsp.brown sugar
1 tsp. almond extract, divided
2 tsp. pure vanilla extract, divided
1/2 cup raw sliced almonds, divided
ground cinnamon

Instructions: 
In each jar, add 1/2 cup oats and a pinch of salt.
Top each with 1 tsp. of brown sugar.
Add 1/2 cup unsweetened almond milk to each jar
Add 1/2 tsp. vanilla extract and 1/4 tsp. to 1/8 tsp. almond extract to each jar.
Stir everything.
Top each jar with 2 TBS. sliced almonds and sprinkle of cinnamon. Close jars and refrigerate overnight or at least 4 hours.
Stir before serving.

Notes:

Adjust the amount of almond milk If you like your oats thinner or thicker.


Honey, Almond Butter and Banana Overnight Oats

Honey, Almond Butter and Banana Overnight Oats

Serves: 4 servings

Ingredients:
4 teaspoons honey
2 teaspoons ground flax
2 cups old fashioned oats
3 cups milk
4 tablespoons almond butter
2 bananas, divided

Instructions:
On a flat surface, place 4 bowls or lidded glass jars. Fill each with 1/2 teaspoon ground flax, 1/2 cup oats, 3/4 cup milk, and 1 tablespoon almond butter.
Peel and mash one banana. Divide mashed banana into the four oat mixtures. Pour milk over the banana and oat mixture and with a spoon, combine ingredients.
Refrigerate for 8 hours or overnight.

When ready to eat, serve cold or warm up for 30 seconds in the microwave. Slice remaining banana, top each oat mixture with banana slices and drizzle 1 teaspoon of honey over the top. Combine and enjoy.
