Rita's Sweet Holiday Baked Ham

Rita's Sweet Holiday Baked Ham
Serves 24 

Ingredients:
1 cup maple syrup
1 cup orange juice
1 cup ginger ale
1⁄2 cup brown sugar
1⁄2 cup honey
1 jar (10 ounce) maraschino cherry, halved
1 (12 pound) fully-cooked, bone-in ham
1 can (15.25 ounce) pineapple, slices in juice, drained
1 box round wooden toothpicks

Instructions:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the maple syrup, orange juice, ginger ale, brown sugar and honey. Stir in the juice from the maraschino cherries and half of the cherries. Score the outer edge of the ham with a sharp knife in a diamond pattern. Cuts should be about 1/4 inch deep. This will allow the ham to soak up the juice.

Place the ham into an oven bag and carefully pour the juice mixture over it, keeping all of the juice in the bag. It may look like there is too much juice, but the ham will soak it up while baking. Place the pineapples onto the top of the ham and secure with toothpicks. Place cherries into the centers of the rings and secure with toothpicks also. Tie the end of the bag closed with the ties provided, place in a large roasting pan, and cut a few small slits in the top of the oven bag.


Bake the ham for 2 hours in the preheated oven. The internal temperature should be 160 degrees F (80 degrees C) when done. Be sure not to touch the bone when taking the temperature. Remove ham from bag to a serving plate and let stand for 10 minutes before carving.



Slow Cooker Glazed Ham

Slow Cooker Glazed Ham

Ingredients:
1 fully cooked ham (any size will work as long as you have a slow cooker large enough for it)
Sauce:
1 1/4 cups brown sugar
1/4 cup honey
1/4 cup spicy brown mustard
3/4 cup dr. pepper (half of a can)
1/4 cup maple syrup

Instructions:
Score ham by using a sharp knife to cut lines into ham in a criss cross pattern. The lines only need to be about ⅛th of an inch deep. Fill slow cooker with about 1 inch of water. Place ham in slow cooker. Cover and cook on low for 4-6 hours.
hour before serving, prepare the sauce. Whisk together all sauce ingredients in a medium sauce pan. Bring to a boil, then reduce to a simmer and cook for 10 minutes. Remove from heat and allow to chicken for 5-10 minutes.

Drain water and ham juices from slow cooker. Pour sauce over ham inside the slow cooker, being sure to cover the whole ham. Cover and cook another 30 minutes. Place ham on serving dish. Carve/slice the ham and spoon the remaining sauce from the slow cooker over the ham. Serve warm. Enjoy!

Notes:
This recipe works for a very small ham (2 pounds) to a very large ham that will feel a big group. For large hams (over 7-8 pounds), double the sauce recipe.



Cranberry Orange Glazed Ham

Cranberry Orange Glazed Ham

Ingredients: 
1 (8-pound) full cooked ham, spiral sliced
1 can jellied cranberry sauce
¼ cup orange juice
½ firmly packed brown sugar
1½ cups orange juice
zest of one orange
orange slices, optional
cranberries, optional

Instructions:
Preheat oven to 325º F.
Place ham into roasting pan. Combine cranberry sauce, orange juice, brown sugar, and orange zest. Spread over ham, reserving at least one cup to serve alongside ham when finished.

Pour additional orange juice into base of roasting pan and arrange orange slices and cranberries (optional) around ham. Place top on roasting pan or tent with aluminum foil and bake 1 hour.

Uncover ham and baste well with pan juices. Recover. Repeat every 15 minutes until the thickest part of the ham registers 140º on a meat thermometer.


Remove roasting pan from the oven and baste again. Let the ham stand for about 15 minutes before carving.
