NEW ENGLAND CRANBERRY ORANGE COMPOTE

Yields: 4 cups
Ingredients:
1 1/4 cups water
1 1/4 cups sugar
1/3 cup maple syrup
1 pound fresh cranberries
1/4 cup orange juice
1/4 cup orange rind, cut into thin strips
1 tablespoon grated orange zest
2 tablespoons coarsely chopped candied ginger
1 cup walnuts, pecans, or your favorite nut, coarsely chopped

Instructions:
Place sugar and 1 1/4 cups water in large saucepan; bring to boiling. Reduce the heat to low and cook 10 to 15 minutes, or until the sugar syrup begins to thicken slightly and turn pale amber.
Add maple syrup and cranberries. Cook, stirring occasionally, until cranberries begin to pop. Add orange juice, rind, and zest. Cook another 5 to 10 minutes, or until sauce begins to thicken slightly.
Remove from the heat. Add ginger and nuts, stirring well. Cool completely. Place in a clean jar and cover; refrigerate up to a week, or freeze 6 months. Makes 4 cups.

Serves: 4-6
Ingredients:
6 cups salad (I used a combination of arugula and baby spinach, any spring green mix will do)
1 red apple
1 green apple
1 cup walnuts, roughly chopped (such as Diamond of California)
⅓ cup crumbled feta cheese
⅓ cup dried cranberries
dressing (see note)
1 cup apple juice
4 tablespoons apple cider vinegar (or white vinegar in a pinch)
2 tablespoons honey
scant ½ teaspoon salt
¼ teaspoon black pepper
¼ cup oil
Instructions:
Core and chop apples (thin slices or 1 inch chunks). Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl. Whisk together all dressing ingredients. Toss with salad immediately before serving. Enjoy!

WORLD'S BEST CROCKPOT MASHED POTATOES
Serves 12
Ingredients:
9 large {or 5 lbs} potatoes, peeled, cooked & drained
2 3 oz. packages of cream cheese, softened
1 cup sour cream
2 tsp. onion salt
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
Instructions:
Mash potatoes smooth; add remaining ingredients. Beat light & fluffy. Cool, cover & refrigerate. Use within 2 weeks. To use, place desired amount in a greased casserole pan, dot with butter. Bake 350 degrees for 30 minutes. Or use crockpot to reheat.
