Irish Beef Stew with Mashed Potatoes
Yield: Makes 4 servings
Ingredients:
1 Tablespoon olive oil
1 lb. chuck roast, trimmed and cut into cubes
1 yellow onion, diced
4 large carrots, peeled and chopped
2 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon thyme
1 teaspoon crushed rosemary
2 bay leaves
2 cups beef broth
2 Tablespoons butter, softened
2 Tablespoons flour
Heaping 1/3 cup frozen peas
For serving:
Hot cooked mashed potatoes
Instructions:
In large pot or deep skillet set to medium-high heat, add olive oil. Once hot, add chuck roast and cook until browned on all sides, about 4 minutes. Add onions, carrots, garlic, salt, pepper, thyme, rosemary and bay leaves. Cook another 5 minutes. Pour in beef broth. Cover and simmer 2-4 hours, until meat and vegetables are tender.
When ready to serve, remove bay leaves. In a small bowl, stir softened butter and flour together until smooth. Stir butter mixture into the stew. Add frozen peas. Once the gravy thickens slightly, it's done. Serve hot over mashed potatoes.

Tip:
Instead of a large pot, you can use a slow cooker. Just brown the meat in a large skillet first, then add the meat along with vegetables, spices and beef broth to the slow cooker. Simmer on low for 2-4 hours.

Yield: 18 sandwiches
1 loaf cocktail rye or pumpernickel
1 1/2 pounds corned beef, sliced
3/4 pound Swiss cheese, sliced and quartered
1 cup sauerkraut
3 tablespoons butter, melted
Dressing:
1/3 cup mayo
2 tablespoons ketchup
1 tablespoon sweet pickle relish
Mix dressing ingredients together in a small bowl. For each sandwich, spread about a teaspoon of dressing on each piece of bread (you will have some bread left over), then a square of Swiss cheese on each piece of bread. Top with corned beef and sauerkraut. Finish with another slice of bread. Brush both sides of bread with butter and warm on a griddle until hot and golden brown.

Oreo Stuffed Mint Chocolate Brownies

Ingredients:
1 cup butter
2/3 cup cocoa powder
1 teaspoon vanilla
4 eggs
1 1/2 cups sugar
1/2 cup brown sugar
2 cups flour
12-16 Oreos
1 cup mint chips
Optional: additional granulated sugar for sprinkling
Instructions:
Preheat oven to 375. Line an 8x8 inch pan with foil and spray with cooking spray, set aside.
In a medium sauce pan, melt butter of medium heat. Stir in cocoa powder and vanilla. Pour mixture into a large mixing bowl. Add eggs, sugars, and flour and mix until all ingredients are incorporated and well combined. Pour half of batter into prepared pan. Lay a single layer of oreos side by side on top of batter. Pour remaining batter over oreos and spread evenly. Bake 30-40 minutes until a toothpick comes out mostly clean.
Melt chocolate chips, then spread over brownies. Sprinkle with optional sugar if desired. Allow to cool completely before cutting into squares.
