Nothing says fresh like a crisp cucumber salad!  They make delicious sides for your dish to pass at get-togethers or great snacks on a hot summer day.  We have found some refreshing cucumber salads to add to your rotation.  Enjoy!



Pineapple Cucumber Lime Salad

Cook time: 5 mins
Total time: 10 mins
Serves: 6 servings

Ingredients:
1 pineapple, chopped
1 English cucumber, chopped
2 limes, zested and juiced
1/3 cup cilantro, roughly chopped
salt and pepper (optional)

Instructions:
Combine all ingredients and toss lightly to distribute the lime juice and zest evenly.
Season with salt and pepper if desired.
Serve immediately or keep chilled until ready to serve. 



Creamy Yogurt Cucumber Salad

Creamy Yogurt Cucumber Salad

Yield: 8 servings

Ingredients:
1 cup non-fat plain Greek yogurt
3-4 seedless cucumbers, sliced thinly
1/4 red onion, thinly sliced and roughly chopped
1 clove garlic, pressed or minced finely
juice from 1/2 lemon
1/4 cup chopped fresh dill, plus more for garnish
1/4 cup chopped fresh mint, plus more for garnish
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Instructions:

Toss the cucumbers and red onion in a medium to large bowl. Mix the yogurt, garlic, lemon juice, dill, mint, salt and pepper together in a small bowl then add to the cucumbers and toss to coat. Add more salt and pepper as desired and garnish with more mint and dill. Refrigerate for 1 hour before serving.



Cucumber Salad

Cucumber Salad

Ingredients:
2 large English cucumbers
1/2 onion
2-3 tomatoes

For the dressing:
3 Tbsp. white wine vinegar
2 Tbsp. olive oil
1 tsp. oregano
1/8 tsp. salt

Instructions:
Make the dressing: add all ingredients to a small bowl and whisk to combine.
Slice the cucumbers and onion. Dice tomatoes, removing excess juice. Place in a bowl.
Add the dressing and toss to coat. Salt/pepper to taste if needed.

Best if refrigerated for at least an hour to let the flavors combine.
