Pasta salads are great summer sides for barbeques at home or to take to a large gathering.  They also make great meals when the temperatures rise and you don't feel like spending much time cooking!  We've found some delicious recipes for you to add to your collection.  Enjoy!



BLT Pasta Salad
Serves: 6
Prep Time: 20 min

Ingredients:
2-1/2 cups uncooked bow tie pasta
6 cups torn romaine lettuce
1 medium tomato, diced
4 bacon strips, cooked and crumbled
1/2 cup ranch dressing
1 Tablespoon barbecue sauce
1/4 teaspoon pepper

Instructions:
Cook pasta according to package directions. Drain. Then rinse pasta under cold water.
In a large bowl, combine the romaine lettuce, tomato, bacon and pasta.
Drizzle the ranch dressing and barbecue sauce over the top. Gently toss to coat evenly. Season with pepper. Serve immediately and enjoy!



Perfect Pasta Salad

Perfect Pasta Salad

Ingredients:
16 ounce package spiral pasta
2 cups Italian dressing
0.6 ounce packet Italian dressing seasoning mix
8 ounces hard salami or summer sausage, cubed
8 ounces colby jack cheese, cubed
2 cups cherry tomatoes
2 cups cucumber, chopped

Instructions:
Boil pasta in salted water according to package directions. Drain and rinse pasta in cold water to stop the cooking process.

In a bowl, add the Italian dressing and the packet of Italian dressing seasoning mix. Stir to combine. In a large bowl, combine the cooked pasta, salami, cheese, tomatoes, and cucumber. Pour the dressing over top and toss to fully coat the pasta salad. Cover and refrigerate at least 4 hours before serving.

Mandarin Pasta Spinach Salad with Teriyaki Dressing

Mandarin Pasta Spinach Salad with Teriyaki Dressing

Serves: 4

Ingredients: 
8 ounces bowtie pasta noodles
4 cups spinach leaves
1/2 cup craisins
1/3 cup cashews or Diamond of California Pine Nuts
1 4-ounce can mandarin oranges, drained
1/4 cup cilantro leaves, roughly chopped
For the dressing:
1/3 cup teriyaki sauce (the thicker, the better!)
1/3 cup rice wine vinegar (may sub apple cider vinegar)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder (if you have it)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon sugar
1/2 cup oil (such as vegetable oil, canola oil, olive oil)

Instructions:
Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.
In a large bowl toss together pasta, spinach, raisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss, and serve.
