Along with summer comes outdoor parties, barbecues and dinners outside on the patio. What to pair with all the delicious grilled entrees?  Fresh summer sides and salads, of course!  We've found some incredible ones for you to try out.  

Mozzarella and Tomato Salad
Ingredients:
tablespoon balsamic vinegar
tablespoon olive oil
tablespoon chopped fresh basil
tablespoon chopped fresh parsley
large tomatoes, coarsely chopped 
10 oz Mozzarella cheese, cubed (2 cups)

Instructions:
In large bowl, mix vinegar, oil, basil and parsley with whisk. Stir in tomatoes and cheese; toss gently.

No Mayo Broccoli Salad with Blueberries and Apple
Serves: 8

Ingredients:
1 1/2 pounds fresh broccoli, cut into bite-size pieces
1 cup fresh blueberries
1/4 cup finely chopped red onion
1/2 cup dried cranberries
1/4 cup sunflower seeds
1 large apple, chopped into bite-size pieces
1 tablespoon lemon juice
For the creamy yogurt poppy seed dressing:
1 cup Greek yogurt
1/4 cup honey
1 tablespoon lemon juice
2 teaspoons apple cider vinegar
1 tablespoon water
1 tablespoon poppy seeds

Instructions:
Place broccoli, blueberries, red onion, cranberries, and sunflower seeds in a large bowl. In a small bowl, toss apple with 1 tablespoon lemon juice. Add to the big bowl with the salad.

In a small bowl, whisk together all dressing ingredients. Pour dressing over the salad and toss gently to combine. Salad may be served immediately or refrigerated until serving. It will last for 2-3 days in the refrigerator.

Mediterranean Cumber Tomato Salad

Ingredients:
1 1/2 cup cherry tomatoes, sliced
1 large cucumber, chopped ( peel if desired)
2 stalks green onion, finely chopped
1/3 cup parsley chopped
1/3 cup fresh lemon juice
1/2 tsp sea salt (or more to taste)

Instructions:
Cut up the tomatoes, cucumber, green onion, and parsley add it all to a medium sized bowl.

Add, the freshly squeezed lemon juice and salt, stir. Add more salt if desired.
