What's cookin'?  A cool pasta salad can work as a light meal in the heat of summer or a great side for a cook out.  This versatile dish can be served for dinner or lunch.  We've found some great pasta salad recipes for you to try out.  Which is your favorite?




Pasta Salad

Serves: 6

Ingredients:
1 (12 oz) package tri-color rotini
2/3 cup red bell pepper, chopped
1/2 cup red onion, chopped
1 cup cherry tomatoes, sliced in halves
1 cup mushrooms, sliced
1 cup black olives, sliced
2 2/3 cup Italian dressing

Instructions:
Cook the pasta according to the package making sure to salt the water well. Once the pasta is cooked, pour it into a colander and rinse the pasta with cold water to stop it from cooking any anymore. After all the water is strained, place the pasta into a large bowl.

Chop the bell pepper and red onion, then slice the tomatoes, and mushrooms.
Add the vegetables to the pasta and mix just to combine

Pour the Italian dressing over the pasta and stir well. It might seem like a lot of dressing at first, but the pasta will absorb a lot of it.
serve chilled.




Broccoli and Grape Pasta Salad

Broccoli and Grape Pasta Salad
Servings: 6 to 8 servings

Ingredients:
1/2 cup chopped pecans
8 ounces farfalle pasta
3 cups finely chopped broccoli florets
1 cup mayonnaise
1/4 cup sugar
1/4 cup red wine vinegar
1/3 cup diced red onion
1/2 teaspoon salt
2 cups seedless red grapes, cut in half
6 cooked bacon slices, crumbled

Instructions:
Preheat oven to 350 degrees. Place pecans on baking sheet and toast in oven for 5 to 7 minutes, stirring half way through.
Prepare pasta according to package directions, cooking to al dente. Drain pasta and place in a large bowl.
In a medium bowl combine mayonnaise, sugar, red wine vinegar, red onion, and salt. Whisk well.
Add broccoli and grapes to the large bowl with pasta. Gradually add mayonnaise mixture (you may not want to add the whole amount).
Cover and chill for 3 hours. Stir bacon and pecans into salad just before serving.

Spaghetti Salad Recipe

Spaghetti Salad Recipe

Ingredients:
1 pound thin spaghetti, broke into 3-4" pieces
3 Roma tomatoes, diced
1 medium zucchini, diced
1 medium yellow zucchini squash, diced
1 green pepper, diced
1 red pepper, diced
1 red onion, diced
1 cucumber, diced
2 (2.25 oz) cans sliced olives, drained
8 oz cheddar cheese, cut into small cubes
Dressing:
1 (16 oz) bottle Italian dressing (I love Wishbone Robusto Italian )
1/4 cup grated Parmesan cheese
1 teaspoon paprika
1/4 teaspoon garlic powder
Topping:
1 teaspoon Salad Supreme or Johnny's Seasoning (this is optional, but I love the little flavor boost it adds!)

Instructions:
Cook spaghetti according to package directions, then rinse in cold water and drain. Set aside and let cool.
Place tomatoes, zucchini, squash, peppers, onion, cucumber, olives, and cheese in a large bowl. Add cooled spaghetti noodles and mix well.
In a small bowl, mix together dressing, Parmesan cheese, paprika, garlic powder. Pour on top of the spaghetti and vegetables and mix until completely combined. Sprinkle the top with Salad Supreme.

Let sit in the fridge for at least 2 hours before serving (this salad gets better with time, as the flavors meld together).
