Tomato, Mozzarella and Basil Panini

According to Wikipedia a panini is a word with Italian origin.  Originally it was a sandwich made with Italian bread that was served warmed by grilling or toasting.  In many English-speaking countries a panini can be made from many types of bread.  The sandwich is filled with assorted deli meats, cheeses and veggies. It is then pressed by a warming grill and served.  The possibilities are endless and it's perfect for fall!  We have found some delicious recipes for you to try out.  Enjoy!



Tomato, Mozzarella, and Basil Panini
Yields: 2 servings - Serving Size: 1/2 sandwich 

Ingredients:
2 slices whole wheat bread
1/2 cup shredded part-skim mozzarella
1 Roma tomato, thinly sliced
1 thin slice of red onion
8 fresh basil leaves
Pinch of kosher or sea salt
1/8 teaspoon pepper
1 tablespoon extra-virgin olive oil

Instructions:
Spread olive oil with a pastry or basting brush over two slices of bread. Sprinkle each with salt and pepper.
Place one of the bread slices, oil-side down and top basil leaves, tomato slices, onion, and mozzarella. Top with other piece of bread, olive oil side up.
Place a heavy-bottomed skillet on the stovetop over medium-high heat or use a Panini press.
If using a skillet, press down with lid to flatten sandwich a bit. Cook for about 2 minutes, until golden on the bottom, and flip. Repeat on other side.
Slice sandwich in half to make 2 servings.

Turkey Pesto Panini

Ingredients
2 large piece focaccia cut in half (use gluten free bread for gluten free version)
1/4 pound turkey cold cuts
1/4 cup roasted red peppers
1/2 to mato sliced
2-4 tablespoons pesto
2 ounces pepper jack cheese thinly sliced (use vegan cheese for a dairy free version)

Instructions:
Spread pesto on each piece of bread. Split up topping between both sandwiches and layer them on top of the bottom bread piece. Top with other bread piece.
Heat grill pan over medium heat and spray with cooking spray. Add sandwiches and place large heavy pan on top (dutch oven is perfect). Cook for several minutes.
Flip over and repeat. Serve hot!


Bacon, Lettuce and Tomato Grilled Cheese Sandwich

Bacon, Lettuce and Tomato Grilled Cheese Sandwich

Serves: 1 sandwich

Ingredients
2 slices white bread
2 - 3 tablespoons butter or margarine
4 slices American Cheese Singles
4 slices bacon, cooked
2 pieces of lettuce
4-5 thinly sliced pieces of tomato

Instructions:
Cook bacon in oven
Soften butter in microwave about 10 seconds
Brush butter on 2 sides of bread
Add 2 slices of cheese
Add filling ingredients - bacon, lettuce and tomato
Top with 2 more slices of cheese
Top with bread, buttered side up
Heat skillet or griddle, place sandwich buttered side down
Butter top piece of bread
Place saucepan on top of sandwich to add a little weight so the sandwiches ingredients combine and the cheese melts
Cook until brown, flip and cook until brown
Serve immediately
