Leftover Stuffin' Muffins

Thanksgiving is a wonderful holiday that focuses on gratitude, family, friends and food!  After the whirlwind success of your Thanksgiving meal comes the fun of - what to do with all those leftovers?!  We've found some great recipes to add a new spin on the leftovers.  Enjoy!




Leftover Stuffin' Muffins

Cook Time 25 minutes

Ingredients:
3 cups precooked stuffing or dressing
1 cup chopped turkey or ham
1/4 lb. frozen spinach
6 large eggs
2 Tbsp milk or cream
1/4 tsp salt
Freshly cracked pepper

Instructions:
Preheat the oven to 375 degrees. Thaw and squeeze the spinach dry. Add the stuffing, turkey, and spinach to a bowl, then stir lightly to combine without breaking up the stuffing too much.
Liberally coat each well in a muffin tin with non-stick spray (or butter). Divide the stuffing mixture between all 12 cups. Leave the stuffing loosely packed in the cups so that the egg mixture can fill in the empty spaces.
In a medium bowl, whisk together the eggs, milk, salt, and pepper. Divide the egg mixture among the 12 cups, filling each about 1/2 to 3/4 full. The eggs and stuffing mixtures will expand during cooking, so try not to over fill.
Bake the muffins for 25-30 minutes or until lightly golden brown and crispy on the top. Allow the muffins to cool slightly, then run a knife around the edges to loosen and remove each muffin.

Recipe Notes
Make sure to coat well with non-stick spray or butter. These muffins will stick to the tin if not well oiled.

Feel free to get creative with the add-ins. Roasted vegetables, cheese, or other meat make great additions.

Leftover Turkey Noodle Casserole
Yield: 6-8 servings

Ingredients
12 oz pkg Egg Noodles, extra wide
3 cups leftover turkey, diced or shredded
1 cup leftover carrots, diced
12 oz jar Turkey Gravy
1 T dried Thyme
1/2 t salt
1/2 t pepper

Instructions
Preheat oven to 350 degrees. Spray 9x13 baking dish with non-stick cooking spray.
Prepare egg noodles according to package directions. Drain and place back into cooking pot.
Add into egg noodles: turkey, carrots, gravy and seasonings. Stir to combine.
Pour into prepared baking dish. Bake approximately 15 minutes until heated through.


Turkey Gumbo

Turkey Gumbo

Ingredients:
3/4 cup vegetable oil
1 cup flour
2 cups chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped celery
1 tablespoon minced garlic
Cayenne, to taste
1/2 pound smoked sausage, such as Andouille or kielbasa, chopped
1 teaspoon dried thyme
1 teaspoon dried oregano
3 quarts turkey broth or chicken stock or store bought low-sodium chicken broth
Reserved turkey meat from a roast turkey carcass, at least 1 quart of meat
2 tablespoons chopped parsley
2 tablespoons chopped green onions

Preparation:
Combine the oil and flour in a large cast-iron pot or enameled cast-iron Dutch oven, over medium heat. Stirring slowly and constantly for 20 to 25 minutes, make a dark brown roux, the color of chocolate.

Season the onions, bell peppers, and celery lightly with salt and cayenne. Add this to the roux and stir until the vegetables are soft, about 5 minutes. Add the sausage, the dried thyme and oregano, and cook, stirring often, for 5 minutes. Add the broth and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for 45 minutes. Add the reserved turkey meat and cook for 15 to 20 minutes, until flavors have mingled and the turkey meat has softened, but not completely shredded apart. Add the parsley and green onions.

Serve in soup bowls with rice. (File powder can be added at the table according to personal taste.)
