During winter nothing sounds better than a hot breakfast on cold dark days.  It's a great way to warm up and give you energy for your day.  Great way to start your day!  We have found some delicious hot breakfast recipes for you to try out.  Let us know what you think!  Enjoy!



Baked Eggs with Winter Vegetables

Ingredients:
2 tbsp butter or ghee
2 medium leeks halved and thinly sliced
1 lb brussels sprouts halved or quartered
5 oz spinach about 1 large bunch, coarsely chopped
sea salt to taste
cracked black pepper to taste
1/4 cup parmesan cheese optional
4-8 eggs
crusty bread

Instructions:
Preheat the oven to 425.
Heat a cast iron pan over medium-high heat. Add the butter and cook until it foams. Add the leeks and sautee, stirring occasionally, until soft and slightly browned along the edges, 3-4 minutes.

Push the leeks aside and add the brussels sprouts.Sautee, stirring occasionally, until the sprouts are caramelized, 7-8 minutes.

Add the spinach to the pan and sautee, stirring continuously, until the spinach is barely wilted, about 1 minute.

Remove the pan from heat. Sprinkle the vegetables with salt and pepper to taste and the parmesan cheese if using. Crack the eggs over the vegetables, taking care to keep the yolks intact. I find it useful to make a little depression in the vegetables with a spoon to dump the whites into, followed by the yolk.

Transfer the pan to the oven and cook until the whites are set, but the yolks are still runny, 8-12 minutes. Serve immediately. 



Slow Cooker Apple Oatmeal

Slow Cooker Apple Oatmeal

Ingredients
1 Cup of Steel Cut Oatmeal do not substitute with any other kind
4 Cups of Almond Milk unsweetened
3 Apples cubed (I used Gala apples)
1 teaspoon of Cinnamon
1/2 Teaspoon of Nutmeg
A Pinch of allspice
cloves A Pinch of
A Pinch of salt
1/4 cup of Maple Syrup you can use honey if you'd like
Sliced almonds for topping (optional)

Instructions:
In a bowl, place all the ingredients together. Mix
Spray the inside of the slow cooker with nonstick spray (don't skip this step)
Pour all the mixed ingredients into the slow cooker
Close the lid
Cook on low for 8 hours
After the hours has passed, stir with a spoon and serve

Recipe Notes

Leftovers can be refrigerated. To reheat, place oatmeal in a bowl with a splash of almond milk





Ham, Egg and Avocado Breakfast Burrito

Ham, Egg and Avocado Breakfast Burrito
Ingredients:
2 eggs
1 tablespoon milk
1/2 cup cooked ham, diced
1 avocado, sliced
2 tablespoons cheese
2 large flour tortillas (whole wheat tortillas work great for this recipe)

Directions:
Spray a small bowl with non-stick cooking spray. Crack both eggs into bowl and add milk. Whisk quickly until eggs are completely mixed. Cook eggs in microwave for 60 seconds, stir, then return to microwave for 30-60 more seconds or until eggs are completely cooked.
Take a tortilla and place half of the cooked eggs down the middle. Top with half of the ham, half of the avocado, and half of the cheese. Roll the tortilla into a burrito, folding in the edges. 
Optional: place burrito in a panini press or cook in a skillet over medium heat until outside of burrito starts to turn golden brown (1-2 minutes per side). 


Makes 2 burritos.
